Simple version of my explanation:
Various naturally processes in our body produced free-radicals, i.e chemicals that can cause chronic diseases like cancer, heart disease, rheumatoid arthritis, Alzheimer diseases, etc etc. Research so far found that anti-oxidants are the scavenger of free-radicals inside our body. So anti-oxidants are the good chemicals that can help fight all the diseases mentioned above.
Vitamins such as Vitamin C, Carotenes and Vitamin E are anti-oxidants. Chemicals that are found naturally in certain food are also potent anti-oxidants.
Food that are rich in anti-oxidants are such as;
- berries (strawberries, raspberries, blackberries, blueberries)
- broccoli, cabbage, cauliflower, brussel sprouts, carrots (more when cooked)
- tomatoes especially when cooked in oil.
- red grapes (this is why research said red wine has health benefits)
- garlic (maybe why vampires are scared of it - just a joke ok)
- spinach (Popeye is right to advise us taking spinach)
- soy
- tea (especially green tea)
When we injured ourselves we can see the redness and swelling on our body. This is just a way our body's response to physical injury and begins its repair process. This process is called inflammation. Inflammation also occurs inside our body and we cannot see it. Over period of time can caused the chronic diseases. A simple blood test can measure the chemical marker for inflammation, a protein called C-reactive protein (CRP). If your CRP level is below 5 milligrams per liter of blood, then no need to worry.
From the food that we eat we will get both the naturally occurring good and bad chemicals. Inflammatory chemicals promote inflammation reaction inside our body. Whereas anti-inflammatory chemicals prevent the inflammation process. So selecting food that contain anti-inflammatory agents benefit us. Also avoid consuming too much of food that promotes inflammation like fast food, junk food and food contain arachidonic acid.
Food that are rich in anti-inflammatory agents are such as;
- rich in omega 3s: salmon, anchovies, mackerel, sardine, tuna, herring, free-range or grass feed chicken and beef.
- rich in mono-unsaturated fatty acids: olive oil (go for extra virgin because least proceed)
- dark green vegetables such as lettuce and spinach
- cherries, blueberries
- broccoli, cauliflower, Brussels sprouts
- turmeric, ginger and garlic (Asian practice of cooking with turmeric, ginger and garlic definitely a protection)
- Sea kelp and seaweed
- Shitake mushroom, enoki mushroom, oyster mushroom (healthy and yet yum yum)
- papaya, pineapple (yummy fruit salad)
- sweet potato, yam
- herbs: holy basil, rosemary, oregano, Chinese Goldthread, Hu Zhang, Baikal Skullcap
- tea (of course green tea)
